Oven meatballs with vegetable gravy - a dietary hot meal of minced chicken. In this recipe, gravy is cooked without flour, only vegetables.
Small meat balls baked in the oven in a thick and aromatic sauce can be served with mashed potatoes, rice or buckwheat - you get a full, hearty dinner.
I cooked chicken meatballs, but you can make meatballs from any minced meat - pork, beef, or mix several types of meat according to this recipe.

Meatball Ingredients with Vegetable Gravy
- 800 g of chicken;
- 100 g onions;
- 50 g green onions;
- 100 g loaf;
- 60 ml of milk;
- salt pepper.
- 300 g squash;
- 80 g of onions;
- 80 g of carrots;
- 100 g of bell pepper;
- 200 g of tomatoes;
- 30 ml of sunflower oil;
- salt, granulated sugar, paprika.
The method of cooking meatballs with gravy of vegetables in the oven
We start with minced meatballs
We put finely chopped chicken fillet in a food processor, add onions and green onions. Feather onions will give the mince a light green hue, during the cooking process the color intensity will disappear. Then add a loaf soaked in milk without a crust, pour salt and freshly ground black pepper to taste. Grind the ingredients until smooth and remove the bowl with minced meat in the refrigerator for 15 minutes.
Lubricate the pan and hands with frying oil. We make small round meatballs the size of a ping-pong ball. We spread on a baking sheet with a small distance between them. If you sculpt the meat balls with wet hands, the water falling on the baking sheet will splatter, hiss, and the butter will cover the cutlets with a thin layer and a golden crust will be obtained.
We place the baking sheet with meatballs in a oven heated to 200 degrees, we cook for about 12 minutes. If you cook in a gas oven, then the meatballs need to be flipped once.
Now make the meatball sauce
Zucchini peel and seed, cut into cubes. We chop finely or three carrots on a grater. Cut tomatoes and bell peppers into large slices. We cut a small onion head in half rings.
We put in a deep stewpan zucchini, carrots, sweet peppers, tomatoes and onions.
Pour the sunflower oil into the stewpan, pour sugar and salt to taste. Add ground sweet paprika.
We close the stewpan with a lid, simmer for 30 minutes, until the vegetables become completely soft.
We grind the stewed vegetables with a submersible blender until smooth, taste to have enough salt and sugar.
Pour the sauce into a baking sheet with meatballs, put the baking sheet in the hot oven again for 10 minutes.
We serve meatballs to the table hot, sprinkle with fresh herbs before serving.
